Armadillo eggs wrapped in bacon with right way bbq!


Recipe: Armadillo Eggs Wrapped in Bacon

Ingredients:

- 2 pound ground pork
- 4 tablespoons Midnight Kick seasoning (or your favorite BBQ rub)
- 6 jalapeño peppers, cored seeds removed
- 8 ounces cream cheese, softened
- 1 tablespoon Ultimate Pork Seasoning (or your preferred pork seasoning)
- 12 slices of thin bacon
- 8oz of Mexican cheddar cheese blend
- Toothpicks for securing bacon

**Instructions:**

1. **Prepare the Jalapeño Peppers:**
- Core jalapeño peppers
- Carefully remove the seeds and membranes to reduce the heat level. Use gloves or wash your hands thoroughly afterward to avoid irritation.

2. **Prepare the Cream Cheese Filling:**
- In a mixing bowl, combine the softened cream cheese and Ultimate Pork Seasoning add in the shredded Mexican cheddar cheese blend. Mix until well combined.

3. **Stuff the Jalapeño Peppers:**
- Take each jalapeño half and stuff it with a generous spoonful of the cream cheese mixture.

4. **Assemble the Armadillo Eggs:**
- Take a portion of the ground pork and flatten it into a thin patty in the palm of your hand.
- Place a stuffed jalapeño pepper in the center and carefully wrap the ground pork around it, forming a ball shape. Ensure the pepper is completely enclosed.

5. **Season the Armadillo Eggs:**
- Sprinkle the Midnight Kick seasoning evenly over the outside of each armadillo egg, pressing it gently to adhere.

6. **Wrap with Bacon:**
- Wrap a slice of bacon around each armadillo egg, securing it with toothpicks to prevent unraveling.

7. **Prepare the Grill:**
- Preheat your grill to 250°F (120°C) for indirect grilling.

8. **Smoke the Armadillo Eggs:**
- Place the armadillo eggs on the grill grates away from direct heat.
- Smoke the armadillo eggs at 250°F for approximately 1.5 to 2 hours or until the internal temperature reaches145°F (71°C) and the bacon is crispy.

9. **Crisp Up the Bacon:**
- If you want the bacon even crispier, you can turn up the grill temperature to around 350°F (175°C) for the last 15-20 minutes of cooking, but watch them closely to prevent burning.

10. **Serve:**
- Remove the armadillo eggs from the grill and let them rest for a few minutes.
- Carefully remove the toothpicks.
- Serve your delicious armadillo eggs hot, and enjoy!
