Chuck Roast smoking session in the Dutch Oven, with The Barbarian Obliterator Cleaver stealing hearts and flavors alike!

Ingredients:
- 3-4 pound chuck roast
- Red peppers, green peppers, yellow peppers (sliced)
- Midnight Kick BBQ rub by Right Way BBQ
- 1 stick of butter
- 1 onion (diced)
- Baby potatoes (halved)
- Flour and milk (for thickening)

-Beef or chicken broth

Instructions:

1. **Prepare the Chuck Roast:**
- Preheat your smoker to 250°F (120°C).
- Rub the chuck roast generously with the Midnight Kick BBQ rub, ensuring all sides are coated.

2. **Smoking the Chuck Roast:**
- Place the seasoned chuck roast directly on the smoker grates.
- Smoke the roast until it reaches an internal temperature of 165°F (74°C). This may take several hours, so be patient.

3. **Preparing the Vegetables:**
- While the chuck roast is smoking, prepare your vegetables. Slice the peppers, dice the onion, and add the baby potatoes.

4. **Dutch Oven Setup:**
- Once the chuck roast reaches 165°F (74°C), remove it from the smoker.
- In a Dutch oven, add sliced peppers, diced onion, halved baby potatoes, and a stick of butter, Along with beef or chicken broth.
- Place the smoked chuck roast on top of the vegetables in the Dutch oven.

5. **Continue Smoking in Dutch Oven:**
- Cover the Dutch oven with its lid.
- Place the Dutch oven back on the smoker.
- Continue smoking until the internal temperature of the chuck roast reaches 195-205°F (90-96°C). Use a probe to check for tenderness.

6. **Thickening the Sauce:**

  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter or cooking oil
  • 1 cup milk (whole milk or any milk of your choice)

7. **Final Steps:**
- Once the chuck roast reaches the desired internal temperature and the vegetables are tender, (test it with a fork for tenderness!) your chuck pot roast is ready.
- Carefully remove the Dutch oven from the smoker.
- Allow the roast to rest for a few minutes before slicing.

8. **Serve and Enjoy:**
- Plate the sliced chuck roast alongside the flavorful vegetables.
- Spoon some of the thickened sauce over the top before serving. Over rice is suggested!
