How to cook a prime rib roast with right way bbq!


 Here's a guide to preparing it in the oven or smoker using the Right Way BBQ

### Ingredients:
- Prime rib roast
- Right Way BBQ Ultimate BBQ Steak Seasoning (Amazon, www.rightwaybbq.com)
- Optional additional seasoning for between the bones and outside layer (like rosemary, thyme, etc.)

### Preparation:
1. Apply a generous coating of Right Way BBQ Ultimate Steak Seasoning to the prime rib. Ensure it's thoroughly coated on all sides. For extra flavor, consider adding optional seasonings between the bones.

2. Let the seasoned prime rib sit overnight in the refrigerator to allow the flavors to infuse.

### Oven Instructions:
1. Preheat your oven to 500 degrees Fahrenheit.
2. Place the prime rib, bone side down, on a roasting pan or a rack inside a baking dish.
3. Insert a meat thermometer probe into the thickest part of the roast without touching the bone.
4. Cook at 500°F for about 15-20 minutes to form a crust.
5. Reduce the oven temperature to 325°F.
6. Continue cooking until the internal temperature reaches your desired level of doneness. For medium rare, remove around 125-130°F,  (approximately 13-16 minutes per pound, but use a meat thermometer to check).

Once done, remove the roast from the oven and tent it with foil. Let it rest for 15-20 minutes before carving.

### Smoker Instructions:
1. Prepare your smoker for indirect cooking at 250-300°F. (Pellet smokers can start at 500 degrees, Then back down to 250-300, Do not try this with charcoal grills it is better to reverse sear with grills like the Big green egg.
2. Place the prime rib in the smoker, bone side down.
3. Insert a meat thermometer probe into the thickest part of the roast without touching the bone.
4. Smoke the prime rib until the internal temperature reaches around 115-120°F (this can take around 3-4 hours, but rely on the meat thermometer for accuracy).
5. Remove the prime rib from the smoker temporarily.
6. Increase the smoker temperature to 500°F or preheat an oven to 500°F.
7. Put the prime rib back in the smoker (or transfer to a preheated oven) and cook for an additional 10-15 minutes to develop a crust and reach a final internal temperature of 125-130°F for medium rare.
8. Once done, remove the roast from the smoker/oven and tent it with foil. Let it rest for 15-20 minutes before slicing. (the roast will continue to cook increasing internal)

### Serving:
- Carve the prime rib into slices and serve with your favorite sides or sauces.
