Ingredients:
- 3 pounds flank steak
- 1 bunch of asparagus, trimmed
- 8 ounces cream cheese, softened
- Midnight Kick Seasonings (or any preferred seasoning blend), to taste
- Ultimate Steak BBQ Rub (or your favorite steak rub), to taste
- 3-5 serrano peppers, thinly sliced
- Olive oil
- Kitchen twine or toothpicks (for securing the steak)
Instructions:
1. Prepare the flank steak: Lay the flank steak flat on a cutting board. Using a sharp knife, butterfly the steak horizontally, slicing it open along the long edge, but don't cut all the way through. You should have a large, thin piece of meat you can spread out.
2. Season the steak: Pat the flank steak dry with paper towels. Season both sides of the steak generously with the Ultimate Steak BBQ Rub, Midnight Kick Seasonings, salt, and pepper. Set it aside to marinate while preparing the other ingredients.
3. Grill the asparagus: Preheat your grill or grill pan over medium-high heat. Toss the trimmed asparagus with a drizzle of olive oil, salt, and pepper. Grill the asparagus for about 3-4 minutes, turning occasionally until they're tender and slightly charred. Remove them from the grill and set aside.
5. Assemble the stuffed steak: Lay the butterflied flank steak flat on the cutting board with the grain running from left to right. Spread the cream cheese mixture evenly over the surface of the steak. Add the cheese of your choice we like to use feta. Place the grilled asparagus spears horizontally across the steak, along with the sliced serrano peppers.
6. Roll up the steak: Starting from one end, tightly roll up the flank steak with the asparagus, cream cheese, and peppers inside. Secure the roll with kitchen twine or toothpicks at regular intervals to hold the filling in place.
7. Place the steak roll on the grill and cook for about 10-15 minutes, turning occasionally, until the internal temperature reaches your desired level of doneness (around 130°F for medium-rare).
