Stuffed Butterflied Pork Loin Recipe

#### Ingredients:
- 1/2 of a whole pork loin, butterflied
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup diced onions
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 6 strips of bacon, cooked and crumbled
- Midnight Kick BBQ rub rub on outside of pork loin ( Amazon or rightwaybbq.com) -Ultimate Pork BBQ rub was applied on the inside of the loin!
- Wood chips for smoking (hickory, apple, or cherry)
- Smoker pellets

#### Instructions:

1. **Prepare the Pork Loin:**
- Lay the half pork loin on a clean surface.
- Butterfly the pork loin by making a lengthwise cut down the center, almost but not quite cutting all the way through. Open it up like a book.

2. **Season the Pork:**
- Sprinkle the Midnight Kick BBQ rub (or your preferred BBQ rub) generously over the inside and outside of the butterflied pork loin. Massage the rub into the meat.

3. **Prepare the Stuffing:**
- In a bowl, combine the softened cream cheese, shredded mozzarella, diced onions, diced green bell pepper, diced red bell pepper, diced green onions, and crumbled bacon. Mix well.

4. **Stuff the Pork Loin:**
- Spread the cream cheese mixture evenly over the inside of the butterflied pork loin.
- Carefully roll the pork loin back up, ensuring the stuffing is securely enclosed. Use kitchen twine to tie the rolled pork loin at regular intervals.

5. **Preheat the Smoker:**
- Preheat your smoker to a temperature of 225-250°F (107-121°C). Add wood chips or pellets (hickory, apple, or cherry) for a flavorful smoke.

6. **Smoke the Pork Loin:**
- Place the stuffed and tied pork loin on the smoker rack.
- Smoke the pork loin until it reaches an internal temperature of 145°F (63°C), which is the recommended safe temperature for pork.

7. **Rest and Slice:**
- Once the pork loin is done, remove it from the smoker and let it rest for about 10-15 minutes.
- Carefully remove the kitchen twine and slice the smoked, stuffed pork loin into medallions.

8. **Serve and Enjoy:**
- Serve the delicious stuffed pork loin slices with your favorite sides.
