Butterflied Rolled Pork Loin

Butterflied, stuffed, and smoked to perfection, this pork loin is packed with vibrant flavors and cheesy goodness. Here's how to make it the Right Way!

Ingredients:

  • 1 pork loin
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/3 cup sundried tomatoes, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  •  Inside and outside Coating Right Way BBQ Midnight Kick seasoning

Instructions:
Butterfly the pork loin by slicing it open carefully to create a flat, even surface. Gently tenderize the meat for uniform thickness.

Generously season the inside of the pork loin with Midnight Kick. Evenly layer the red, yellow, and orange peppers, onion, sundried tomatoes, mozzarella, parmesan cheese, and baby spinach across the surface.

Starting from one end, tightly roll the pork loin and secure it with butcher’s twine to keep the fillings in place.

Rub the outside of the pork roll with more Midnight Kick seasoning, ensuring full coverage for maximum flavor.

Place the pork loin on your smoker or grill preheated to 250-300°F. Smoke until the internal temperature reaches 145-150°F. 1-2 hours cook time.

Remove the pork loin from the heat and let it rest for 10-15 minutes to lock in the juices. Slice and serve with your favorite BBQ sides!
