- 4 Swift thick-cut pork chops (cut out of a swift whole boneless loin)
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 4 strips of bacon, cooked and crumbled
- Midnight Kick BBQ rub (or any BBQ rub of your choice)
- Wood chips for smoking (hickory, apple, or cherry work well)
- Smoker pellets (same as chips)
Instructions:

In a medium bowl, combine the cream cheese, mozzarella cheese, diced peppers, green onions, and crumbled bacon. Mix well.

Using a sharp knife, cut a pocket in each pork chop, being careful not to cut through to the other side. Stuff each pork chop with the cheese mixture. Secure the opening with toothpicks, if necessary.

Season each pork chop generously with Midnight Kick BBQ rub, making sure to cover all sides.

Preheat your smoker to 225°F (107°C). Add your wood chips to the smoker box or directly onto the coals, or make sure your pellets are full.

Place the stuffed pork chops on the smoker rack, making sure there is space between them. Close the smoker lid and smoke for 2-3 hours, or until the internal temperature of the pork chops reaches 145°F (63°C).

Remove the pork chops from the smoker and let them rest for 5 minutes before removing the toothpicks and serving.

Note: Cooking times may vary depending on the size of the pork chops and the temperature of your smoker. Use a meat thermometer to check the internal temperature of the pork chops to ensure they are fully cooked.(145 internal) If using a BBQ rub with salt already in it, adjust the amount of rub used to your taste to avoid over-salting the dish.
