Low and Slow Tri-Tip Brisket Style with Butter Wrap

Ingredients:

  • 1 tri-tip roast (about 3-4 pounds)

  • 1 Cup unsalted butter
  • Butcher Paper
  • Cook-time 4-6 hours depends on smoker temperature

Instructions:

  1. Preparation:

    • Remove the tri-tip roast from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for more even cooking.
  2. Seasoning:

    • Liberally season the tri-tip roast with Right Way BBQ Ultimate Steak BBQ Rub. Make sure to coat all sides of the meat evenly, pressing the rub into the surface to adhere.
  3. Preheat the Grill:

    • Prepare your grill for indirect heat cooking. If using a charcoal grill, light the coals and push them to one side, leaving an area with no direct heat. If using a gas grill, only turn on the burners on one side, leaving the other side off.
  4. Low and Slow Cooking:

    • Once the grill is preheated, place the seasoned tri-tip on the side of the grill without direct heat. Close the lid and adjust the vents to maintain a temperature of around 250°F (121°C)
  5. Monitoring the Temperature:

    • Use a reliable meat thermometer to monitor the internal temperature of the tri-tip. When the temperature reaches about 165°F (74°C), or the bark is set. it's time for the next step.
  6. Butter Wrap:

    • Cut the unsalted butter into small cubes or slices and place them on top of the tri-tip. Wrap the tri-tip tightly with butcher paper to create a sealed packet.
  7. Continue Cooking:

    • Place the Paper Wrapped tri-tip back on the grill and continue cooking at the same low temperature until the internal temperature reaches your desired doneness. Recommended final temp around 200-205F (93°C-96°C)
  8. Resting:

    • Once the tri-tip reaches the desired temperature, carefully remove it from the grill and let it rest in the paper for about 15-25 minutes and or Cooler. This allows the juices to redistribute and results in a more tender and flavorful meat.
  9. Slice and Serve:
